Sautéed mushrooms and golden onions blended with fragrant basmati rice and whole spices — an easy, delicious one-pot meal ideal for a comforting lunch or dinner.
Ingredients
1 cup basmati rice (washed and soaked for 30 minutes)
1.5 cups mushrooms (sliced)
1 medium onion (finely sliced)
1–2 green chilies (slit)
1 tbsp ginger-garlic paste
1 tsp cumin seeds
1 bay leaf
2–3 green cardamoms
2–3 cloves
1 small cinnamon stick
1/2 tsp turmeric powder
1 tsp garam masala or biryani masala
1 tbsp soy sauce (optional)
1 tbsp ghee or oil
Salt to taste
1.5 cups water (for cooking rice)
Fresh coriander leaves (for garnish)
Instructions
1. Prepare the Rice:
Rinse the basmati rice thoroughly.
Soak in water for 30 minutes, then drain and set aside.
2. Sauté the Aromatics:
Heat ghee or oil in a large pan or pressure cooker.
Add cumin seeds, bay leaf, cardamoms, cloves, and cinnamon.
Let them sizzle to release aroma.
Add sliced onions and sauté until golden brown.
3. Cook the Mushrooms:
Add ginger-garlic paste and green chilies; sauté for 1–2 minutes.
Add sliced mushrooms and cook for 5–6 minutes, until moisture is released and they soften.
