Paneer Biryani Recipe (Vegetarian Style)
Marinated paneer cubes layered with fragrant basmati rice, fried onions, mint, and saffron — a royal and aromatic vegetarian delight.
Ingredients
For the Paneer Marinade:
200g paneer (cubed)
1/2 cup thick yogurt
1 tsp ginger-garlic paste
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp garam masala or biryani masala
Salt to taste
Fresh coriander and mint leaves, chopped
Other Ingredients:
2 large onions, thinly sliced
2 tbsp ghee or oil
A few strands of saffron soaked in 1/4 cup warm milk (optional)
Fresh coriander and mint leaves for layering
Fried onions for garnish (optional)
1 tbsp lemon juice
Instructions
1. Marinate Paneer:
In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and chopped herbs.
Add the paneer cubes and coat well.
Cover and refrigerate for 30 minutes to 1 hour.
2. Cook the Rice:
Boil water with salt, cardamoms, cloves, bay leaf, and cinnamon.
Add soaked rice and cook until 70–80% done (grains should be slightly firm).
Drain and set aside.
3. Prepare Paneer:
Heat ghee or oil in a heavy-bottomed pan.
Fry onions until golden brown and crispy. Remove half for garnish.
Add marinated paneer and cook on medium heat for 5–7 minutes, until slightly browned.
4. Layering the Biryani:
In a large heavy pot, start with a layer of cooked rice.
Add a layer of cooked paneer and fried onions.
Drizzle saffron milk (if using), and add mint and coriander leaves.
Repeat the process to create multiple layers.
5. Dum Cooking (Steaming):
Cover the pot tightly with a lid (seal edges with dough if desired).
Cook on very low heat for 15–20 minutes (place on a tawa/griddle to avoid direct heat).
Optionally, place a weight on the lid to trap steam.
6. Final Touch:
Let the biryani sit for 10 minutes after turning off the heat.
Fluff gently with a fork.
7. Serve:
Garnish with fried onions.
Serve hot with raita, salad, or boiled egg (if preferred).
Pro Tip:
For extra richness, add fried cashews or raisins between layers before steaming!
